Nutrition hbs1986 Assist in implementing the Nutrition and Exercise Program in the residence halls on the UC Davis campus. Administer the Nutrition Program in one Dining Room. This includes setting up, running and cleaning up the nutrition discussion table one night a week during dinner. Attend weekly nutrition intern meetings. Read and present two research articles from the Journal of American Dietetics Association. Conduct resident floor programs as assigned. Computer diet analysis-as submitted by students. Develop a nutrition and exercise weekly topic to be presented in your dining room one week towards the end of the quarter. MUST BE NUTRITION MAJOR with at least two nutrition classes. This is a PAID position! |

Dietetics/Nutrition
hbs2677 Experience will be in the realm of learning to recognize and meeting the needs of elderly. Nutrition education for the seniors at congregate meal sites will be a large portion of the internship. There will be practical exposure to some food service both here in the main kitchen, working at the nutrition sites during meal time, and doing a "ride along" on the home delivered meal routes to complete the monitoring of production and delivery. Qualifications: Graduated or about to graduate within the next 12 months whereby completing most of the dietetic courses of study. Area of study should be Advanced Nutrition, Foods Administration and/or Food Management. Valid driver's license, car insurance, and own transportation required. Mileage will be paid monthly. One intern per day. |

Nutrition
Education Interns will receive an overview of the National School Lunch program during the internship and will view how Food Services actively teams with schools to promote nutrition education throughout the district (K-12). Intern will: (1) Participate in writing parent nutrition articles and student nutrition activity pages for elementary schools; (2) Assist Registered Dietitian and school nutrition partners with set up and participation in school nutrition events, including dissemination of materials to teachers and prizes to students; (3) Assist Registered Dietitian in teaching nutrition lessons in K-6 classrooms, including classroom-cooking activities; and (4) Assist Registered Dietitian with routine school site inspection and reviews. Requirements: Applicant must be mature, dependable, responsible, and self motivated. Previous experience with children and/or nutrition knowledge is desirable. Desire to improve children’s health required! Writing skills a plus. Dependable transportation a must! |

Nutrition
Intervention Assistant hbs292 Nutrition assessment and intervention for a large clinical trial with the Women's Health Initiative (WHI), a clinical trial study of post-menopausal women, ages 50-79 upon entry into the study. Student learns about dietary intervention tools and techniques necessary for adherence to dietary change programs, specifically the change to a lowfat diet. Responsibilities include 1) analysis of food records, 2) food preparation and service within the class setting, and 3) facilitating one-two 15 minute demonstrations for the class. May assist with data entry, mailings, conduct telephone reminder calls, and special projects as they arise. Requirements: Nutrition/Dietetics Major. EXCELLENT COMMUNICATION SKILLS BOTH WRITTEN AND VERBAL. Ability to learn protocol, policies and procedures with a broad understanding of a large clinical trial environment. Computer skills for data entry. Ability to follow a recipe to completion and knowledge of standard cooking techniques, measurements and utensils. 3 interns only. |

The day and time of your orientation (if applicable) will be provided when you sign up. If an orientation is required for your internship and you do not attend, you will be dropped from your internship with a penalty. Immunizations: Proof of Rubella and Rubeola vaccination, and TB test (within the last 10 months) required for many internships. Details will be provided when you sign-up. Clinical Dietetics - hbs 1970 Observe and assist education/counseling to outpatients of community clinic. Clients are usually seen for weight loss, diabetes, high cholesterol, hypertension or children with anemia. In addition, intern will observe nutrition evaluations and counseling of pregnant and lactating women. Learn diet recall procedure. Complete special project. |

Pediatric
Clinical Nutrition hbs2292 Become familiar with hospital clinical nutrition policies and procedures. Work closely with RD in four areas of pediatric nutrition: 1) Outpatient Clinic, with an emphasis on weight management program; 2) Spinal Cord Injured; and 3) Orthopaedics. Review medical charts, obtain pertinent data for nutrition assessment, screening and monitoring. Observe patient interview and patient education. Become familiar with factors that affect a patient's nutritional status and implement dietary modifications. Attend and observe rehabilitation conference. Initiate and complete a dietetics project. DIET THERAPY REQUIRED! Intern will be seeing severely disfigured patients, often with open wounds. |
